For more flavor, you can substitute butter or chicken fat (schmaltz) for the vegetable oil in the matzah balls... Jews usually use schmaltz or vegetable oil for kosher-keeping reasons, but there's no reason for you to follow those! (I make vegetarian matzah balls, so I use butter... yum!)
